Assign a different number to an IP touch 4028

Hi,

We have a 4028 handset in one of our meeting rooms and it has extension 7062. How to I change the extension to 7060 ?

I'm sure it must be a simple procedure but I just cannot figure it out.
Currently when we plug in a new phone, after we point it at the IP address of the PBX, it just automatically gets the next free extension. My issue is I want to be able to give it a previous used extension of a phone that is no longer plugged in

any help or pointers would be greatly appreciated.
