I'm installing a ICS and after installing just was told the IP address parameter will be changed.
Does anyone know a procedure to change the IP parameters of the ICS server ? (IP Address, Mask, Gateway, DNS...) and by the way, is it possible to setup two DNS ?

Just as any Linux server my friend. There is a lot of info on internet.
Also yes, you can have 2 or more DNS server, just be sure that what changes only is the IP and not the hostname, otherwise you will have to reinstall it all.

Use the follow command on the terminal:

system-config-network
